How to Make Szechuan Chicken?
Cut the chicken into large pieces. In a bowl, mix together cornstarch, rice vinegar, low-salt soy sauce, dark soy sauce, and black pepper, and let it rest in the refrigerator for at least 30 minutes.
Heat the vegetable oil in a large pan. Add the chicken pieces and fry over medium heat for 5-6 minutes, until browned on the outside.
Remove the browned chicken from the pan and set aside.
Slice the garlic and ginger thinly. Cut the peppers into large pieces, about the size of the chicken pieces. Slice the spring onions into large pieces.
Heat a wok or large pan over high heat.
First, add 4-5 tablespoons of frying oil to the pan and sauté the garlic and ginger for 1 minute.
Add all the peppers to the pan and sauté for about 1 minute until heated through, then add the chicken. Add the rice vinegar, sesame oil, and soy sauce at this stage as well
In a small bowl, mix the water and cornstarch, then gradually pour it into the pan.
Once the chicken is browned, add the fresh scallions and sesame seeds, remove from heat, and serve hot. Enjoy!
